Denver Omelet

You could make plain old scrambled eggs for breakfast, or you could kickstart your morning with an infinitely customizable, delicious…Denver Omelet!

INGREDIENTS:

❇️ 1 whole egg

❇️ 3 egg whites

❇️ 1 Tbsp skim milk

❇️ 1/8 tsp black pepper

❇️ 1/4 green bell pepper, diced

❇️ 1/4 red bell pepper, diced

❇️ 1 slice onion, chopped

❇️ 1/4 cup lean ham, diced

❇️ 2 Tbsp reduced-fat sharp cheddar cheese, shredded

DIRECTIONS:

1️⃣ In a mixing bowl, whisk together the egg, egg whites, skim milk and black pepper.

2️⃣ Lightly coat skillet with cooking spray. Add bell peppers, onions, and ham. Sauté over medium-high heat until onions start to soften and ham begins to caramelize, about 5 minutes. Remove from pan and set aside.

3️⃣ Pour egg mixture into skillet, cover and cook about 4 minutes until eggs are set but still moist.

4️⃣ Spoon bell peppers, onions, and ham onto half of the omelet. Fold omelet over filling and sprinkle with cheese.

Now that’s a hearty breakfast!
